Jeremy Arnaud comes from a family of winemakers, but it was only later in his studies that he discovered his true passion for wine. After his training as an oenologist and a number of educational internships in the wine world, things went quickly for Arnaud. He is now seen as a 'rising star' in Chablis. Instead of the family domaine to continue, he decided to follow his own path and prove himself with a modest domaine of just 0,55 hectares in Viviers. This choice gave him the freedom to put his own ideas into practice, and laid the foundation for his successful career. His vineyard, Vau de Vey, consists of vines dating back to the 80s. The steep slope of the plot requires careful attention. That is why Arnaud grows grass between the rows to prevent erosion. The harvest is done entirely by hand. He also minimizes the use of sulfur and other interventions in the process, and deliberately opts for long maturation and avoids filtration. This enhances the natural expression of the grapes. His goal is to make wines that reflect the essence of the terroir and the specific character of the vintage, with an unmistakable elegance and balance. For Jeremy Arnaud, a great wine is the fruit of the soil, which only fully expresses itself through the careful work of the winemaker. The quality of a wine begins at the plot level.
