This single-vineyard cuvée honours the caillotte soils, these distinctive terroirs, limestone and stony, which have developed on a Kimmeridgian or Oxfordian basement. A substrate that retains and restores daytime heat during the summer period, favouring fairly early ripening of the grapes.
We are located in the Montchauvy sector, in the Crézancy area. The vines, planted in 2010, benefit from a south-east exposure. The soils are thin, but the root system will draw from the depths of the fissured limestone the water and mineral elements that the vine needs. A mineral imprint that gives the wine its tapered, taut structure and its characteristic empyreumatic accents. A wine as straight as an i, or rather like an "iota", we would like to add...
True to his conviction that Sauvignon needs time to shed its varietal trappings and better bring out all the nuances of the soil and terroir that saw its birth, Gilles opts for a very long ageing. After fermentation in stainless steel vats, the ageing continues on total lees, in eggs and concrete vats. The wine is nourished and patinated for two years, before bottling. It should be added that Gilles, in his quest for pure expression of the fruit and the soil, favours the use of nitrogen to protect the juices during the handling phases, thus limiting the addition of sulphur to a minimum. The wine then spent 2 more years in the cool cellars of the Domaine: it refines its natural balance and gains even more complexity.
