Rare Wine

This single-vineyard cuvée honours the caillotte soils, these distinctive terroirs, limestone and stony, which have developed on a Kimmeridgian or Oxfordian basement. A substrate that retains and restores daytime heat during the summer period, favouring fairly early ripening of the grapes.

We are located in the Montchauvy sector, in the Crézancy area. The vines, planted in 2010, benefit from a south-east exposure. The soils are thin, but the root system will draw from the depths of the fissured limestone the water and mineral elements that the vine needs. A mineral imprint that gives the wine its tapered, taut structure and its characteristic empyreumatic accents. A wine as straight as an i, or rather like an "iota", we would like to add...

True to his conviction that Sauvignon needs time to shed its varietal trappings and better bring out all the nuances of the soil and terroir that saw its birth, Gilles opts for a very long ageing. After fermentation in stainless steel vats, the ageing continues on total lees, in eggs and concrete vats. The wine is nourished and patinated for two years, before bottling. It should be added that Gilles, in his quest for pure expression of the fruit and the soil, favours the use of nitrogen to protect the juices during the handling phases, thus limiting the addition of sulphur to a minimum. The wine then spent 2 more years in the cool cellars of the Domaine: it refines its natural balance and gains even more complexity.

Tasting Notes: Upon the first swirl, the Guillerault Fargette Sancerre Iota Montchauvy 2019 reveals a pure yet intense bouquet of crisp white fruit like Granny Smith apple and Comice pear, intertwined with vibrant citrus notes of lime and grapefruit. A pronounced and alluring smoky minerality, reminiscent of warm rock dust or gunflint, immediately asserts itself. As the wine opens, delicate floral notes of violet, lily of the valley, and freesia may emerge, alongside subtle hints of almond and quince jelly. On the palate, the wine is dense and incredibly textured, yet remarkably straight and linear, driven by a powerful citrus energy. The flavors echo the nose, with bright fruit and a deep, spicy, almost empyreumatic (smoky/toasty) character emerging from the limestone soil. A distinct saline quality runs through the palate, contributing to its mouthwatering nature. The finish is long, profound, and persistent, leaving a lingering impression of citrus zest, a fine bitterness (fins amers), and an intense mineral tang.

Discover the Winery:Guillerault Fargette

In 1971, Jacques and Geneviève Guillerault created Domaine des Caves du Prieuré in an ancient (18th century) winery located in the village of Crézancy. Since 1995, their son Gilles has presided over the 19 hectare estate, joined by his brother-in-law Sébastien Fargette in 2001. At Guillerault– Fargette, their holdings are planted 75% to Sauvignon Blanc with the remainder planted to Pinot Noir. From a plot of Sauvignon Blanc vines comes the cuvée “Iota”. The name comes from the Greek letter “ι” and impersonates the mouthfeel after drinking the wine. After manual harvest, the wine is fermented in stainless steel vats and aged for 18 month on fermentation lees. The plot of vines, from which the “Epsilon” cuvée comes, were planted in 1972, on Kimmeridgian marl soils. This land represents a small part of the estate, which is why the term “ε”, which is used to designate small numbers, is being used to name this cuvée. The cuvée “Psi” is made from pinot noir grapes from different plots found in the villages of Reigny, Bué and Sancerre. Here the Greek letter Ψ is used, which with its three lines, represents the balance between fruit, freshness and finesse. Gilles Guillerault and Sébastien Fargette are commited to sustainable viticulture. Natural grasses are grown between the rows and the soils are worked manually. No herbicides or pesticides are used. Each year, the harvest is brought in and carefully sorted on their sorting table before being pressed. The juice is allowed to settle by gravity before fermentation.
